Ingredients

  • 2 ripe avocados
  • 1 can of chickpeas, drained and rinsed
  • 1/4 cup of tahini
  • 2 garlic cloves, minced
  • Juice of 1 lemon
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • Assorted vegetables for serving (carrots, celery, bell peppers, etc.)

Instructions

  1. In a food processor, combine the avocados, chickpeas, tahini, garlic, lemon juice, olive oil, salt, and pepper.

  2. Blend until smooth and creamy, scraping down the sides as needed. Add additional olive oil or water if needed to reach desired consistency.

  3. Transfer the avocado hummus to a serving bowl and garnish with a drizzle of olive oil and a sprinkle of paprika, if desired.

  4. Serve with fresh vegetables for dipping.
