Ingredients

  • 2 cans (15 oz each) of pinto beans, drained and rinsed
  • 2 tbsp vegetable oil
  • 1/2 medium onion, chopped
  • 2 cloves of garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 1/4 cup chicken or vegetable broth

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.

  2. Add chopped onion and minced garlic to the skillet. Cook until they become soft and fragrant, about 2-3 minutes.

  3. Add the drained and rinsed pinto beans to the skillet. Use a potato masher or fork to mash the beans to your desired consistency.

  4. Stir in the ground cumin, chili powder, salt, and pepper. Cook for another 2-3 minutes.

  5. Pour in the chicken or vegetable broth to help moisten the beans and cook for an additional 5 minutes, stirring occasionally.

  6. Taste and adjust the seasonings if necessary.

  7. Serve hot as a side dish or as a filling for burritos, tacos, or enchiladas.
