Ingredients

  • 4 venison steaks (about 6 ounces each)
  • Salt and pepper, to taste
  • 3 tablespoons olive oil
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 1/4 cup sloe gin
  • 1 cup plum sauce
  • 1 tablespoon red wine vinegar
  • Fresh parsley, for garnish

Instructions

  1. Season the venison steaks generously with salt and pepper on both sides.

  2. In a large skillet, heat olive oil over medium-high heat. Add the venison steaks and cook for about 3-4 minutes on each side for medium-rare, or until desired doneness. Remove from the skillet and let them rest for a few minutes.

  3. In the same skillet, add minced shallot and garlic and sauté for about 1-2 minutes until fragrant.

  4. Stir in the sloe gin, plum sauce, and red wine vinegar. Cook for another 2-3 minutes, stirring occasionally, until the sauce thickens slightly.

  5. Return the venison steaks to the skillet with the sauce and cook for an additional 2-3 minutes, until the steaks are heated through and coated in the sauce.

  6. Serve the pan-fried venison steaks with the sloe gin and plum sauce. Garnish with fresh parsley.
