Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 2 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 cups frozen corn kernels
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.

  2. Add sweet potatoes, onion, and garlic. Cook for 5 minutes or until sweet potatoes are slightly tender.

  3. Add bell peppers and corn to the skillet. Cook until vegetables are tender, stirring occasionally.

  4. Add smoked paprika, cumin, salt, and pepper. Stir together and cook for an additional 3-5 minutes.

  5. Serve hot as a side dish.
