How To Make Wild Rice and Mushroom Dressing Recipe

A delicious dish with nutty wild rice and sautéed mushrooms.

Serves:

Ingredients

  • 1 cup wild rice
  • 2 cups chicken or vegetable broth
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1/4 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Rinse wild rice in cold water and drain.

  2. In a medium saucepan, bring broth and rice to a boil, reduce heat to low and simmer for 45-50 minutes, or until rice is tender and has absorbed all the liquid.

  3. In a large skillet, heat olive oil over medium heat. Add onion and garlic and sauté for 3-4 minutes, until softened.

  4. Add mushrooms and sauté until they are tender and have released their liquid.

  5. Stir in thyme and season with salt and pepper.

  6. In a large mixing bowl, combine cooked rice with the mushroom mixture.

  7. Transfer mixture to a baking dish and bake at 350°F for 15-20 minutes, or until heated through.
