Serves:

Ingredients

  • 1 cup brown or green lentils
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 celery stalks, chopped
  • 2 medium carrots, peeled and chopped
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon smoked paprika
  • 3 cups vegetable or chicken broth
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Rinse lentils, remove debris and set aside.

  2. Heat oil in a large pot, add onion and garlic. Sauté for 2 minutes.

  3. Add chopped celery, carrots, and cook for 5 minutes.

  4. Add cumin, coriander, smoked paprika, and cook for 1 minute.

  5. Add broth, lentils, bay leaf, salt, and pepper. Stir well to combine, and bring to a boil.

  6. Reduce heat and simmer for 30 minutes, or until lentils are tender.

  7. Adjust seasoning as needed and serve hot.
