Ingredients

  • 1 pound dried red beans, rinsed and sorted
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 3 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1 bay leaf
  • 1 tbsp vegetable oil
  • 4 cups chicken broth
  • Andouille sausage, sliced (optional)
  • 4 cups cooked white rice

Instructions

  1. In a large pot, soak beans in water overnight. Drain and rinse beans.

  2. In the same pot, heat oil over medium-high heat. Sauté onion, pepper, celery, and garlic until vegetables are tender.

  3. Add beans, thyme, oregano, paprika, bay leaf, and chicken broth to the pot. Bring to a boil, then reduce heat to low and simmer for 1 1/2 hours, stirring occasionally.

  4. If using sausage, add it to the pot during the last 30 minutes of cooking.

  5. Serve over cooked white rice.
