How To Make Red Beans and Rice Recipe

Ingredients
- 1 pound dried red beans, rinsed and sorted
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 3 celery stalks, chopped
- 3 garlic cloves, minced
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 1 bay leaf
- 1 tbsp vegetable oil
- 4 cups chicken broth
- Andouille sausage, sliced (optional)
- 4 cups cooked white rice
Instructions

In a large pot, soak beans in water overnight. Drain and rinse beans.

In the same pot, heat oil over medium-high heat. Sauté onion, pepper, celery, and garlic until vegetables are tender.

Add beans, thyme, oregano, paprika, bay leaf, and chicken broth to the pot. Bring to a boil, then reduce heat to low and simmer for 1 1/2 hours, stirring occasionally.

If using sausage, add it to the pot during the last 30 minutes of cooking.

Serve over cooked white rice.
