Ingredients

  • 1 cup dried lentils
  • 2 cups water
  • 1 chicken breast, cooked and shredded
  • 1 Serrano pepper, thinly sliced
  • 2 cups rocket leaves
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils under cold water and place them in a saucepan with the water. Bring to a boil, then reduce heat and simmer for 15-20 minutes or until the lentils are tender. Drain and set aside.

  2. In a large bowl, combine the cooked lentils, shredded chicken, Serrano pepper slices, and rocket leaves.

  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the lentil mixture and toss to combine.

  4. Serve the warm lentil salad immediately and enjoy!
