Ingredients

  • 1 lb ground lamb
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 tbsp tomato paste
  • 1 cup beef broth
  • 2 cups mashed potatoes
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper
  • Olive oil

Instructions

  1. Preheat oven to 375°F.

  2. Heat olive oil in a large skillet over medium heat.

  3. Add onion and garlic, cook until softened.

  4. Add lamb, rosemary, thyme, salt and pepper, cook until browned.

  5. Stir in tomato paste and beef broth, let it simmer for 10 minutes.

  6. Transfer lamb mixture to a baking dish.

  7. Top with mashed potatoes, spreading them evenly over the lamb mixture.

  8. Sprinkle Parmesan cheese over the top.

  9. Bake for 35-40 minutes.

  10. Let cool for 5 minutes before serving.
