Ingredients

  • 6 large eggs
  • 1/2 cup milk
  • 2 tbsp unsalted butter
  • 6 oz breakfast sausage
  • 1/2 cup chopped onion
  • 1/2 cup chopped red pepper
  • 1/2 cup chopped green pepper
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.

  2. In a mixing bowl, whisk together eggs and milk. Season with salt and pepper. Set aside.

  3. In a skillet, melt butter over medium-high heat. Add sausage and cook until browned, breaking it up with a wooden spoon as it cooks.

  4. Add onion, red pepper, and green pepper to the skillet. Cook until veggies are tender.

  5. Add egg mixture to the skillet and stir to combine.

  6. Pour mixture into a greased 8×8 inch baking dish.

  7. Sprinkle shredded cheese on top of the casserole.

  8. Bake for 35-40 minutes, until the center is set and the cheese is melted and bubbly.

  9. Let cool for a few minutes before slicing and serving.
