Ingredients

  • 2 egg whites
  • 1/4 tsp cream of tartar
  • 1/2 cup granulated sugar
  • 1/2 tsp peppermint extract
  • Red food coloring

Instructions

  1. Preheat oven to 200°F (93°C). Line a baking sheet with parchment paper.

  2. In a large bowl, beat egg whites and cream of tartar until soft peaks form.

  3. Gradually add sugar, 1 tbsp at a time, beating until stiff peaks form.

  4. Beat in peppermint extract and food coloring.

  5. Drop mixture by spoonfuls onto parchment paper, forming small mounds.

  6. Bake for 1 hour, or until cookies are dry and crisp.

  7. Let cool before serving.
