How To Make Linzer Cookies Recipe

Delicious and crumbly shortbread cookies with raspberry jam in the middle, dusted with powdered sugar.

Ingredients

  • 1 cup unsalted butter, at room temperature
  • 1/2 cup granulated sugar
  • 1/2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 cup raspberry jam
  • Powdered sugar for dusting

Instructions

  1. In a large bowl, cream together butter and sugar until light and fluffy.

  2. Beat in vanilla extract.

  3. In a separate bowl, whisk together flour, cinnamon, and salt.

  4. Gradually add dry ingredients into wet ingredients, mixing until just combined with a spatula.

  5. Press dough into a flat disc and chill in the fridge for at least 30 minutes.

  6. Preheat oven to 350°F.

  7. Roll out dough on a floured surface and cut out circles using a cookie cutter.

  8. Use the smaller cookie cutter to cut out the centers of half the cookies.

  9. Place all cookies on a parchment-lined baking sheet and bake for 10 minutes or until lightly golden brown.

  10. Allow cookies to cool completely.

  11. Spread raspberry jam on the whole cookies and sandwich with the cut out cookies.

  12. Dust with powdered sugar.
