  • 1 cup almond flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup chopped almonds
  • additional powdered sugar for rolling

Instructions

  1. Preheat oven to 325°F.

  2. In a bowl, mix almond flour and powdered sugar.

  3. Add in softened butter, vanilla extract, and salt. Mix until a dough forms.

  4. Stir in chopped almonds.

  5. Roll dough into small balls and place on a baking sheet lined with parchment paper.

  6. Bake for 20 minutes.

  7. Let cool for 5 minutes, then roll warm cookies in additional powdered sugar.

  8. Let cool completely before serving.
