How To Make Easter Basket Linzer Cookies

Fun and festive buttery cookies with a jam-filled center, perfect for Easter!

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup raspberry jam
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F.

  2. In a mixing bowl, cream together the butter, powdered sugar, and vanilla extract until fluffy.

  3. Add flour, one cup at a time, and continue to mix until combined.

  4. Divide dough in half, flatten into disks, wrap in plastic and refrigerate for 30 minutes.

  5. Roll out dough 1/4 inch thick and cut out an equal number of solid cookies and cookies with a small cutout center.

  6. Transfer cookies to a baking sheet lined with parchment paper, and bake for 10-12 minutes until the edges are light golden brown.

  7. Spread raspberry jam on the solid cookies, top with cut-out cookies, and sprinkle with powdered sugar.
