  • 2 cups all-purpose flour
  • 1/4 cup brown sugar
  • 1 tbsp baking powder

  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 3/4 cups milk
  • 1/3 cup molasses
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • Cooking spray

Instructions

  1. Preheat waffle iron.

  2. In a large bowl, whisk together the flour, brown sugar, baking powder, cinnamon, ginger, nutmeg, and salt.

  3. In another bowl, whisk together the milk, molasses, melted butter, and eggs until well combined.

  4. Add the wet ingredients to the dry ingredients and stir until just combined.

  5. Spray waffle iron with cooking spray and ladle 1/2 cup of batter onto the iron per waffle.

  6. Close the iron and cook until waffle is golden brown and crispy.
