How To Make Sausage & Root Veg Stovie
Serves:
Ingredients
- 4 sausages (any variety)
- 2 tbsp vegetable oil
- 1 onion, sliced
- 2 carrots, diced
- 2 parsnips, diced
- 2 potatoes, diced
- 2 cloves of garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper, to taste
- 2 cups vegetable broth
Instructions

Heat the vegetable oil in a large skillet over medium heat. Add the sausages and cook until browned on all sides. Remove from the skillet and set aside.

In the same skillet, add the onion, carrots, parsnips, and potatoes. Cook until the vegetables are slightly tender, about 5 minutes.

Add the minced garlic, dried thyme, dried rosemary, salt, and pepper to the skillet. Cook for another minute.

Slice the cooked sausages into bite-sized pieces and add them back to the skillet. Pour in the vegetable broth and bring to a simmer.

Cover the skillet and cook for 25-30 minutes, or until the vegetables are soft and the flavors are well combined.

Serve the stovie hot and enjoy!
