How To Make Root vegetable and sausage skillet
A hearty and nutritious one-pan dish packed with root veggies and flavorful sausage.
Serves:
Ingredients
- 1 lb sausage, sliced
- 3 cups root vegetables (carrots, parsnips, turnips), peeled and chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- Salt and pepper, to taste
- 2 tbsp olive oil
Instructions

Heat a large skillet over medium-high heat and add in the sliced sausage. Cook until browned on all sides, about 5 minutes.

Remove the sausage from the skillet and set aside. Add the olive oil to the skillet.

Add the onion and garlic to the skillet and cook until soft, about 3 minutes.

Add the chopped root vegetables to the skillet and toss with the onion and garlic. Season with salt, pepper, and thyme.

Cover the skillet and cook the vegetables until tender, stirring occasionally, about 15-20 minutes.

Add the sausage back to the skillet and stir to combine with the vegetables. Cook for an additional 5 minutes to heat through.
