Ingredients

  • 2 pounds of russet potatoes, peeled and cut into chunks
  • 3 tablespoons of vegetable oil
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Place the potato chunks in a large pot and cover with cold water. Bring to a boil and cook for 5 minutes. Drain the potatoes and return them to the pot.

  3. Add the vegetable oil, salt, and black pepper to the pot with the potatoes. Shake the pot vigorously to rough up the edges of the potatoes and coat them in the oil and seasonings.

  4. Transfer the potatoes to a large baking sheet, spreading them out in a single layer.

  5. Roast in the preheated oven for 30 minutes, then flip the potatoes with a spatula and roast for an additional 30 minutes until golden brown and crispy.

  6. Remove from the oven and let cool for a few minutes before serving.
