Ingredients

  • 4 large potatoes, peeled and cut into chunks
  • 2 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large pot, parboil the potatoes in salted water for 5 minutes. Drain well.

  3. Place the parboiled potatoes in a large roasting pan.

  4. Drizzle the olive oil over the potatoes and sprinkle with oregano, salt, and black pepper. Toss to coat evenly.

  5. Roast in the preheated oven for 30-40 minutes, or until the potatoes are golden brown and crispy, flipping them halfway through.

  6. Serve hot and enjoy!
