- 4 large potatoes, peeled and cut into chunks
- 2 tablespoons olive oil
- 1 tablespoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions

Preheat the oven to 425°F (220°C).

In a large pot, parboil the potatoes in salted water for 5 minutes. Drain well.

Place the parboiled potatoes in a large roasting pan.

Drizzle the olive oil over the potatoes and sprinkle with oregano, salt, and black pepper. Toss to coat evenly.

Roast in the preheated oven for 30-40 minutes, or until the potatoes are golden brown and crispy, flipping them halfway through.
