How To Make Roast Chicken & Roots

Ingredients
- 1 whole chicken
- 4 carrots, peeled and chopped
- 4 parsnips, peeled and chopped
- 2 onions, quartered
- 4 cloves of garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon dried thyme
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C).

Season the chicken inside and out with salt, pepper, and dried thyme.

In a large roasting pan, toss the carrots, parsnips, onions, and garlic with olive oil, salt, and pepper.

Place the chicken on top of the vegetables in the roasting pan.

Roast the chicken in the preheated oven for approximately 1 hour, or until the internal temperature reaches 165°F (74°C).

Remove the chicken from the oven and let it rest for 10 minutes before carving.

Serve the roast chicken with the roasted root vegetables and enjoy!
