  • 6 large potatoes, peeled and thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons fresh thyme leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C). Grease a baking dish with olive oil.

  2. In a large bowl, toss the sliced potatoes with olive oil, thyme leaves, salt, and black pepper until well coated.

  3. Arrange a layer of the potato slices in the prepared baking dish, overlapping slightly. Repeat with remaining potato slices, forming multiple layers.

  4. Sprinkle Parmesan cheese evenly over the top layer of potatoes.

  5. Cover the dish with foil and bake for 30 minutes. Then remove the foil and bake for an additional 15 minutes, or until the potatoes are golden and crisp.

  6. Serve the crispy layered thyme potatoes hot as a side dish.
