Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Peel and cut the potatoes into bite-sized chunks.

  3. Place the potatoes in a large mixing bowl and add the olive oil, garlic powder, rosemary, thyme, salt, and pepper. Toss until the potatoes are well coated.

  4. Transfer the potatoes to a baking sheet lined with parchment paper, spreading them out in a single layer.

  5. Roast the potatoes in the preheated oven for about 45 minutes, or until they are golden and crispy. Flip them halfway through to ensure even browning.
