How To Make Roast Pork with Apples & Mustard

Ingredients
- 2 lbs pork loin roast
- 2 tbsp Dijon mustard
- 2 apples (such as Granny Smith or Honeycrisp), sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- salt and pepper, to taste
- 1 cup chicken broth
Instructions

Preheat the oven to 375°F (190°C).

Rub the pork roast with the Dijon mustard, and season with salt and pepper.

In a large oven-safe skillet or roasting pan, heat the olive oil over medium heat. Add the pork roast and sear on all sides until browned.

Remove the pork from the skillet and set aside. In the same skillet, add the sliced apples, onion, and garlic. Cook until the apples are slightly softened and the onion is translucent.

Return the pork roast to the skillet, nestling it among the apples and onion. Pour the chicken broth over the pork.

Cover the skillet with foil or a lid and transfer to the preheated oven. Roast for about 1.5 to 2 hours, or until the pork reaches an internal temperature of 145°F (63°C).

Remove the skillet from the oven and let the pork rest for 10 minutes before slicing.

Serve the roast pork with the apples and onions, and drizzle with the pan juices.
