How To Make Chorizo & Red Cabbage Tacos

Ingredients
- 8 small corn tortillas
- 1 lb chorizo, casing removed
- 2 cups thinly sliced red cabbage
- 1 small red onion, thinly sliced
- 1 jalapeno, seeded and minced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- Salt and pepper, to taste
- 1/4 cup chopped fresh cilantro
- Lime wedges, for serving
Instructions

Heat a large skillet over medium heat and warm the tortillas on both sides. Wrap them in foil to keep warm.

In the same skillet, cook the chorizo until browned and cooked through, breaking it up with a wooden spoon. Drain any excess grease.

Add the red cabbage, red onion, jalapeno, and garlic to the skillet. Cook for 5 minutes, until the cabbage is slightly softened.

Stir in the cumin, paprika, salt, and pepper. Cook for an additional 2 minutes.

Remove from heat and stir in the cilantro.

Serve the chorizo and red cabbage mixture in the warm tortillas. Squeeze fresh lime juice over the top.
