How To Make Walkers’ Wild Mushroom, Bacon & Barley Broth

Ingredients
- 4 slices of bacon, diced
- 1 onion, diced
- 2 cloves of garlic, minced
- 8 oz wild mushrooms, sliced
- 1 cup barley
- 4 cups vegetable broth
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

In a large pot, cook the bacon over medium heat until crispy. Remove bacon from pot and set aside, leaving the bacon fat in the pot.

Add the diced onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional minute.

Add the sliced mushrooms to the pot and cook until they release their juices, about 5 minutes.

Stir in the barley, vegetable broth, and cooked bacon. Bring the broth to a boil, then reduce the heat to low and cover. Simmer for 45 minutes, or until the barley is tender.

Season the broth with salt and pepper, to taste.

Serve the broth hot, garnished with fresh parsley.
