Ingredients

  • 1 lb ground beef
  • 1/2 cup bread crumbs
  • 1/4 cup chopped parsley
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 lb mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 4 cups mashed potatoes (prepared)

Instructions

  1. In a large bowl, combine ground beef, bread crumbs, parsley, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.

  2. Roll the mixture into meatballs, about 1 inch in diameter, and set aside.

  3. Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5 minutes. Remove the meatballs from the skillet and set aside.

  4. In the same skillet, add mushrooms and garlic. Cook until mushrooms have released their moisture and are tender, about 5 minutes.

  5. Add chicken broth to the skillet and bring to a simmer. Cook for 2 minutes, then add heavy cream. Continue to simmer for another 5 minutes, until the sauce has thickened slightly.

  6. Return the meatballs to the skillet and simmer for 10 minutes, until meatballs are cooked through.

  7. Serve the meatballs and creamy mushrooms over a bed of mashed potatoes. Enjoy!
