How To Make Kashmiri Rogan Josh

Ingredients
- 500g lamb, cut into chunks
- 2 tbsp vegetable oil
- 2 onions, finely chopped
- 4 cloves garlic, minced
- 1-inch ginger, grated
- 2 large tomatoes, pureed
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp fennel seeds
- 1/2 tsp turmeric powder
- 1/2 tsp Kashmiri red chili powder
- 1/4 tsp cinnamon powder
- 1/4 tsp cardamom powder
- 1 cup plain yogurt
- Salt, to taste
- Fresh cilantro, for garnish
Instructions

Heat oil in a large pan over medium heat. Add onions and cook until golden brown.

Add garlic and ginger, and sauté for another minute.

Add lamb chunks and cook until browned on all sides.

In a separate bowl, mix together pureed tomatoes, cumin powder, coriander powder, fennel seeds, turmeric powder, red chili powder, cinnamon powder, and cardamom powder.

Pour the tomato mixture into the pan with the lamb and stir well to coat the meat.

Reduce heat to low, cover the pan, and let the curry simmer for 1.5 to 2 hours, or until the lamb is tender.

Stir in yogurt and salt, and simmer for another 10-15 minutes.

Serve hot, garnished with fresh cilantro. Enjoy with steamed rice or naan bread.
