How To Make Roasted Squash & Red Onion Pasta

Ingredients
- 1 small butternut squash, peeled, seeded, and cut into 1-inch cubes
- 1 medium red onion, sliced
- 3 cloves of garlic, minced
- 2 tablespoons of olive oil
- Salt and black pepper, to taste
- 8 oz of pasta (your choice)
- 1/4 cup of grated Parmesan cheese
- Fresh parsley, chopped, for garnish
Instructions

Preheat the oven to 400°F (200°C).

In a large baking dish, combine the butternut squash, red onion, minced garlic, olive oil, salt, and black pepper. Toss to coat the vegetables evenly.

Roast in the preheated oven for 25-30 minutes, or until the squash is tender and lightly browned.

While the vegetables are roasting, cook the pasta according to the package instructions until al dente. Drain and set aside.

Once the vegetables are done, remove them from the oven and let them cool slightly.

In a large mixing bowl, combine the roasted vegetables with the cooked pasta. Toss gently to combine.

Sprinkle the grated Parmesan cheese over the pasta and vegetables. Mix well.

Serve the roasted squash and red onion pasta warm, garnished with fresh parsley.
