Ingredients

  • 8 medium-sized carrots, peeled and cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground paprika
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper, to taste
  • 1 cup labneh (strained yogurt)
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons toasted sesame seeds

Instructions

  1. Preheat your oven to 400°F (200°C).

  2. In a large mixing bowl, combine the carrots, olive oil, cumin, coriander, paprika, cinnamon, salt, and pepper. Toss until the carrots are well coated in the spices.

  3. Spread the seasoned carrots in a single layer on a baking sheet. Roast in the preheated oven for about 25 minutes, or until the carrots are tender and slightly caramelized.

  4. Meanwhile, in a small bowl, combine the labneh and lemon juice. Mix well to combine.

  5. Once the carrots are done roasting, transfer them to a serving platter. Drizzle the labneh mixture over the top of the carrots.

  6. Sprinkle with chopped cilantro, mint, and toasted sesame seeds.

  7. Serve the roasted spiced carrots & labneh as a delicious appetizer or side dish.
