Ingredients

  • 1 kabocha squash, seeds removed and cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Place the kabocha squash wedges on a baking sheet.

  3. Drizzle the olive oil over the squash and sprinkle with salt, black pepper, garlic powder, and paprika.

  4. Toss the squash to coat evenly with the seasonings.

  5. Roast in the preheated oven for 25-30 minutes, or until the squash is tender and lightly browned.

  6. Remove from the oven and sprinkle with fresh parsley.

  7. Serve hot as a side dish or appetizer.
