Ingredients

  • 4 medium-sized beets, trimmed and quartered
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 cups watercress, washed and trimmed
  • 1 small apple, grated
  • 2 tablespoons horseradish sauce
  • Juice of 1 lemon
  • 1 tablespoon honey

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large mixing bowl, toss the beets with olive oil, salt, and pepper until well coated.

  3. Spread the beets out on a baking sheet and roast in the preheated oven for 35-40 minutes, or until tender.

  4. In a separate bowl, combine the grated apple, horseradish sauce, lemon juice, and honey. Mix well.

  5. Once the beets are roasted, remove them from the oven and let cool for a few minutes.

  6. Arrange the roasted beets on a serving platter with watercress.

  7. Drizzle the horseradish apple sauce over the beets and watercress.

  8. Serve immediately.
