How To Make Roasted Beets with Watercress & Horseradish Apple Sauce

Ingredients
- 4 medium-sized beets, trimmed and quartered
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 2 cups watercress, washed and trimmed
- 1 small apple, grated
- 2 tablespoons horseradish sauce
- Juice of 1 lemon
- 1 tablespoon honey
Instructions

Preheat the oven to 400°F (200°C).

In a large mixing bowl, toss the beets with olive oil, salt, and pepper until well coated.

Spread the beets out on a baking sheet and roast in the preheated oven for 35-40 minutes, or until tender.

In a separate bowl, combine the grated apple, horseradish sauce, lemon juice, and honey. Mix well.

Once the beets are roasted, remove them from the oven and let cool for a few minutes.

Arrange the roasted beets on a serving platter with watercress.

Drizzle the horseradish apple sauce over the beets and watercress.

Serve immediately.
