Ingredients

  • 4 cups fresh rhubarb, chopped
  • 1/2 cup white sugar
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium-sized saucepan, combine the rhubarb, sugar, and water.

  2. Bring the mixture to a boil over medium heat, stirring occasionally.

  3. Reduce the heat and simmer for 20-25 minutes or until the rhubarb is soft.

  4. Remove from heat and stir in the lemon juice and vanilla extract.

  5. Serve warm or chilled.
