How To Make Rhubarb Compote

- 4 cups fresh rhubarb, chopped
- 1/2 cup white sugar
- 1/2 cup water
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Instructions

In a medium-sized saucepan, combine the rhubarb, sugar, and water.

Bring the mixture to a boil over medium heat, stirring occasionally.

Reduce the heat and simmer for 20-25 minutes or until the rhubarb is soft.

Remove from heat and stir in the lemon juice and vanilla extract.
