Ingredients

  • 4 cups rhubarb, chopped
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup packed brown sugar
  • 1/3 cup all-purpose flour
  • 1/3 cup unsalted butter, softened

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large mixing bowl, combine chopped rhubarb, granulated sugar, all-purpose flour, and ground cinnamon. Spread the mixture evenly in an 8×8 inch baking dish.

  3. In another mixing bowl, combine the rolled oats, brown sugar, flour, and softened butter.

  4. Spread the mixture evenly over the rhubarb mixture.

  5. Bake for 40-45 minutes or until the topping is golden brown.

  6. Serve warm with ice cream, if desired.
