How To Make Turkey Chilli Jacket Potatoes

- 4 large baking potatoes
- 1 lb ground turkey
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 2 tbsp chilli powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper, to taste
- Shredded cheese, for topping
- Sour cream, for garnish
- Fresh cilantro, for garnish
Instructions

Preheat the oven to 400°F (200°C). Scrub the potatoes and pierce them with a fork. Place them on a baking sheet and bake for 45 minutes, or until tender.

In a large skillet, heat some oil over medium heat. Add the ground turkey and cook until browned, breaking it up into crumbles.

Add the diced onion, bell pepper, and garlic to the skillet. Cook until the vegetables are softened.

Stir in the diced tomatoes, kidney beans, chilli powder, cumin, paprika, salt, and pepper. Simmer for 15 minutes, until the flavours are well combined.

To serve, cut open the baked potatoes and fluff the insides with a fork. Spoon the turkey chilli over the potatoes. Top with shredded cheese, sour cream, and fresh cilantro.
