How To Make Mushroom Jacket Potatoes

Ingredients
- 4 large potatoes
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 8 oz mushrooms, sliced
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup grated cheese
- Fresh parsley, for garnish
Instructions

Preheat the oven to 400°F (200°C).

Scrub the potatoes clean and prick them with a fork. Place them on a baking sheet and bake for about 45-50 minutes, or until tender.

While the potatoes are baking, heat the olive oil in a pan over medium heat. Add the diced onion and minced garlic and sauté until softened, about 5 minutes.

Add the sliced mushrooms, dried thyme, salt, and black pepper to the pan. Cook for another 5-7 minutes, or until the mushrooms are golden brown and tender.

Once the potatoes are done baking, remove them from the oven and let them cool slightly. Slice each potato in half and scoop out the flesh, leaving a thin layer of potato in the skin.

Mash the scooped-out potato flesh and mix it with the mushroom filling. Spoon the mixture back into the potato skins.

Sprinkle the grated cheese over the stuffed potatoes and return them to the oven for another 10 minutes, or until the cheese is melted and bubbly.

Remove from the oven and garnish with fresh parsley before serving.
