- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 carrot, diced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) black beans, drained and rinsed
- 4 cups vegetable broth
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup frozen corn
- 1/4 cup fresh cilantro, chopped
- 2 corn tortillas, cut into strips
Instructions

Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.

Add bell pepper, zucchini, and carrot. Cook for 5 minutes until vegetables are tender.

Stir in diced tomatoes, black beans, vegetable broth, chili powder, cumin, paprika, salt, and black pepper. Simmer for 15 minutes.

Add frozen corn and cilantro, cook for an additional 5 minutes.

While the soup is simmering, preheat oven to 375°F (190°C). Arrange tortilla strips on a baking sheet and bake for 10 minutes until crispy.
