Ingredients

  • 4 cups mixed greens
  • 1 cucumber, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 avocado, sliced
  • 1/4 cup sliced almonds
  • 1/4 cup crumbled feta cheese
  • For the dressing:
  • 1/4 cup olive oil
  • 3 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp dijon mustard
  • salt and pepper to taste

Instructions

  1. In a large bowl, combine mixed greens, cucumber, bell peppers, cherry tomatoes, and red onion.

  2. In a small bowl, whisk together olive oil, apple cider vinegar, honey, dijon mustard, salt, and pepper.

  3. Drizzle dressing over the salad and toss to coat.

  4. Top with sliced avocado, sliced almonds, and crumbled feta cheese.
