How To Make Mixed Vegetable Curry Recipe
A flavorful and delicious mixed vegetable curry that’s perfect for a healthy meal.

Ingredients
- 1 tbsp oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tbsp ginger, chopped
- 2 cups mixed vegetables (carrots, peas, beans, cauliflower, potatoes)
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp turmeric powder
- 1 tsp garam masala
- Salt and pepper to taste
- 1 can chopped tomatoes
- 1/2 cup water
- Fresh cilantro, chopped for garnish
Instructions

In a large pan, heat oil on medium-high heat and sauté the onions, garlic, and ginger until fragrant.

Add mixed vegetables and cook for 5-7 minutes or until vegetables are slightly tender.

Add cumin, coriander, turmeric, and garam masala and mix well.

Add tomatoes and water, mix well and let it simmer for 10-15 minutes or until the vegetables are cooked.

Garnish with fresh cilantro and serve hot with rice or naan.
