Ingredients

  • 1 tbsp oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp ginger, chopped
  • 2 cups mixed vegetables (carrots, peas, beans, cauliflower, potatoes)
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • Salt and pepper to taste
  • 1 can chopped tomatoes
  • 1/2 cup water
  • Fresh cilantro, chopped for garnish

Instructions

  1. In a large pan, heat oil on medium-high heat and sauté the onions, garlic, and ginger until fragrant.

  2. Add mixed vegetables and cook for 5-7 minutes or until vegetables are slightly tender.

  3. Add cumin, coriander, turmeric, and garam masala and mix well.

  4. Add tomatoes and water, mix well and let it simmer for 10-15 minutes or until the vegetables are cooked.

  5. Garnish with fresh cilantro and serve hot with rice or naan.
