How To Make Mixed Vegetable and Rice Pilaf Recipe

Ingredients
- 1 cup Basmati rice
- 2 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup mixed vegetables (carrots, peas, beans etc.)
- 1 tsp cumin powder
- 1 tsp coriander powder
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions

In a pan, heat olive oil and sauté onions and garlic until translucent.

Add cumin and coriander powder, and cook for 1 minute.

Stir in rice and mixed vegetables, and cook for 2 minutes.

Add water and season with salt and pepper.

Bring to a boil, reduce heat and let it simmer for 25 minutes or until rice is cooked.

Garnish with fresh herbs and serve hot.
