Serves:

Ingredients

  • 1 cup Basmati rice
  • 2 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup mixed vegetables (carrots, peas, beans etc.)
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a pan, heat olive oil and sauté onions and garlic until translucent.

  2. Add cumin and coriander powder, and cook for 1 minute.

  3. Stir in rice and mixed vegetables, and cook for 2 minutes.

  4. Add water and season with salt and pepper.

  5. Bring to a boil, reduce heat and let it simmer for 25 minutes or until rice is cooked.

  6. Garnish with fresh herbs and serve hot.
