How To Make Watercress & Artichoke Soup

Ingredients
- 2 cups watercress, chopped
- 1 can artichoke hearts, drained and chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper, to taste
Instructions

In a large pot, sauté the onion and garlic until translucent.

Add the watercress and artichoke hearts, and cook for 5 minutes.

Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.

Using an immersion blender or regular blender, puree the soup until smooth.

Return the soup to the pot and stir in the heavy cream. Season with salt and pepper.
