Ingredients

  • 2 cups basmati rice
  • 3 cups water
  • 2 tablespoons vegetable oil
  • 1 onion, thinly sliced
  • 2 carrots, diced
  • 1 bell pepper, diced
  • 1 cup green peas
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon biryani masala powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala powder
  • Salt to taste
  • Fresh cilantro, for garnish

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 20 minutes, then drain.

  2. In a large pot, heat the vegetable oil over medium heat. Add the sliced onions and cook until they turn golden brown, stirring occasionally.

  3. Add the ginger-garlic paste and cook for 1 minute. Add the carrots, bell pepper, and peas, and cook for another 2-3 minutes.

  4. Add the soaked and drained rice to the pot and stir well to combine with the vegetables. Add the biryani masala powder, turmeric powder, cumin powder, and garam masala powder. Season with salt to taste.

  5. Pour in the water and bring to a boil. Reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.

  6. Fluff the rice with a fork and transfer it to a serving dish. Garnish with fresh cilantro and serve hot.
