Ingredients

  • 2 cups of cooked rice
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cloves of garlic, minced
  • 1 tbsp of vegetable oil
  • 1 tbsp of soy sauce
  • 1 tsp of curry powder
  • 1/2 tsp of chili flakes
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat vegetable oil in a large pan over medium heat. Add diced onion and cook until translucent.

  2. Add minced garlic and sauté for another minute.

  3. Add diced bell peppers and cook until they start to soften.

  4. Add cooked rice to the pan and stir well to combine with the vegetables.

  5. In a small bowl, mix together soy sauce, curry powder, chili flakes, salt, and pepper. Pour this mixture over the rice and vegetables.

  6. Stir well to evenly coat the rice with the spices. Cook for an additional 5 minutes, stirring occasionally.

  7. Remove from heat and garnish with fresh cilantro.
