How To Make Stuffed Anaheim Peppers Recipe
These roasted and stuffed Anaheim peppers are bursting with flavor and perfect for a savory appetizer.

Ingredients
- 4 Anaheim peppers
- 1/2 pound ground beef
- 1/2 cup cooked white rice
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced onion
- 2 cloves minced garlic
- 1 tsp. ground cumin
- 1 tsp. chili powder
- Salt and pepper to taste
- 1 tbsp. olive oil
Instructions

Preheat oven to 375°F and line a baking sheet with parchment paper.

Cut off the tops of the Anaheim peppers and remove the seeds.

In a skillet, brown the ground beef. Add onion and garlic and cook until they are soft.

Add cooked rice, cumin, chili powder, salt and pepper and stir until everything is mixed well.

Fill each pepper with the beef and rice mixture and place on a prepared baking sheet.

Drizzle olive oil over the peppers and bake for 35-40 minutes, or until peppers are tender and the filling is heated through.

Sprinkle shredded cheddar cheese over the top of each pepper and place back in the oven to broil until the cheese is melted and bubbly.
