How To Make Anaheim Pepper and Cilantro Rice Recipe

A flavorful vegetarian rice dish with tangy Anaheim peppers and fresh cilantro.

Ingredients

  • 1 cup of basmati rice
  • 2 Anaheim peppers, chopped
  • 2 cloves of garlic, minced
  • 1/4 cup of fresh cilantro, chopped
  • 2 tbsp of olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse rice and cook according to package instructions.

  2. In a separate pan, heat olive oil over medium-high heat.

  3. Add chopped Anaheim peppers, garlic and cook until soft.

  4. Mix in the cooked rice and chopped cilantro, then season with salt and pepper to taste.

  5. Reduce heat, cover and cook for additional 5-10 minutes until heated through.
