Sizzling and flavorful, these fajitas are the perfect mix of tender strips of Anaheim peppers, onions and spices, perfect for a fun dinner.

Ingredients

  • 4 Anaheim peppers, sliced thinly
  • 1 large onion, sliced thinly
  • 1 tbsp of cumin powder
  • 2 tsp of chili powder
  • 2 tbsp of olive oil
  • Salt and pepper to taste
  • 8 large tortillas

Instructions

  1. In a large bowl, mix the sliced peppers and onions with the cumin powder, chili powder, salt, pepper and olive oil.

  2. Heat a large skillet over medium-high heat.

  3. Arrange the pepper and onion mixture in an even layer in the skillet.

  4. Cook for 8-10 minutes, stirring occasionally until the vegetables are tender.

  5. Serve immediately with tortillas.
