How To Make Root Vegetable Soup
This hearty soup is packed with earthy flavors of root vegetables and warm spices.
Serves:
Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 parsnips, diced
- 2 sweet potatoes, peeled and diced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 4 cups vegetable broth
- Salt and pepper to taste
Instructions

In a large pot, heat olive oil over medium heat.

Add onion and garlic, sauté until softened.

Add carrots, parsnips, sweet potatoes, cumin, and coriander. Sauté for 5 minutes.

Pour in vegetable broth and bring to a boil.

Reduce heat and let simmer for 30 minutes or until vegetables are tender.

Using an immersion blender, puree the soup until smooth.
