How To Make Root Vegetable Soup

This hearty soup is packed with earthy flavors of root vegetables and warm spices.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 2 parsnips, diced
  • 2 sweet potatoes, peeled and diced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 4 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.

  2. Add onion and garlic, sauté until softened.

  3. Add carrots, parsnips, sweet potatoes, cumin, and coriander. Sauté for 5 minutes.

  4. Pour in vegetable broth and bring to a boil.

  5. Reduce heat and let simmer for 30 minutes or until vegetables are tender.

  6. Using an immersion blender, puree the soup until smooth.

  7. Season with salt and pepper to taste.
