Serves:

Ingredients

  • 4 cups of chopped celery
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 1 cup of heavy cream
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions

  1. In a large pot, heat some olive oil over medium heat. Add the onion and garlic, and sauté until softened.

  2. Add the chopped celery to the pot and cook for a few minutes until slightly softened.

  3. Pour in the vegetable broth and bring to a boil. Reduce heat, cover, and simmer for about 20 minutes, or until the celery is tender.

  4. Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.

  5. Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.

  6. Heat the soup over low heat until warmed through.

  7. Serve the celery soup hot, garnished with chopped fresh parsley.
