How To Make Cauliflower Tots

Ingredients
- 1 medium head of cauliflower, chopped into florets
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 1/4 cup chopped fresh parsley
- 2 cloves of garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 eggs, beaten
Instructions

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Steam or boil the cauliflower florets until they are soft and tender. Drain well and let cool slightly.

In a large bowl, mash the cauliflower using a fork or potato masher until it forms a rice-like texture.

Add the Parmesan cheese, breadcrumbs, parsley, garlic, salt, pepper, and beaten eggs to the cauliflower mixture. Mix well until everything is evenly combined.

Take about 2 tablespoons of the mixture and shape it into a tot shape using your hands. Place it onto the prepared baking sheet. Repeat with the remaining mixture.

Bake in the preheated oven for 20-25 minutes, or until the tots are golden brown and crispy.

Serve the Cauliflower Tots hot with your favorite dipping sauce.
