Ingredients

  • 4 medium beets, peeled and chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/4 cup vegetable broth (optional)

Instructions

  1. In a large pot, bring water to a boil and add the chopped beets. Cook for about 30-40 minutes, until tender.

  2. Drain the beets and let them cool for a few minutes.

  3. In a blender or food processor, add the cooked beets, olive oil, salt, black pepper, garlic, lemon juice, and vegetable broth (if using). Blend until smooth and creamy.

  4. Taste and adjust the seasoning if needed.

  5. Transfer the beet purée to a serving dish and garnish with a drizzle of olive oil and some fresh herbs, if desired.

  6. Serve warm or chilled as a side dish or dip.
