Ingredients

  • 4 large carrots, peeled and cut into thick slices
  • 4 slices of bacon, chopped
  • 2 tablespoons of marmalade
  • 2 tablespoons of unsalted butter
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon grease in the skillet.

  2. In the same skillet, add the sliced carrots to the bacon grease and cook for about 5 minutes, or until slightly tender.

  3. Add the marmalade and butter to the skillet with the carrots, stirring until the butter is melted and the carrots are coated.

  4. Continue to cook the carrots for another 5-7 minutes, stirring occasionally, until the carrots are glazed and tender.

  5. Season with salt and pepper to taste.

  6. Transfer the glazed carrots to a serving dish and sprinkle with the crispy bacon and chopped fresh parsley.

  7. Serve hot as a delicious side dish.
